Livestock farming is among the largest drivers of greenhouse-gas emissions, water use and land consumption. Cultured meat — real meat grown from animal cells rather than animals — is a promising sustainable alternative, but several challenges still limit its scale-up: designing new food-grade, bio-edible materials; co-printing multiple cell types to recreate real tissue structure; reaching high productivity; and ensuring process reproducibility.
Our team contributes on the manufacturing side: we develop novel edible bioinks and pair them with new in-situ data-mining solutions — coupling experimental design with real-time, AI-based monitoring — to make bioprinting controlled, verifiable and reproducible.
